The Ballet Beautiful Kitchen - Easy Summer Meals In summer months fresh, local produce abounds, making healthy eating easy and inspired! When it comes to cooking I’m a fan of meals that are ultra healthy, delicious and simple to serve and prepare. What could be better? When building meals I like a combination of fresh produce with lots of fiber, heathy fats, protein and whole grains. Below are a few of my summer favorites, but remember to be creative when shopping and making your own! My summer grocery list is basically anything fresh, local and in season. Summer greens, cucumbers, zucchini and squash, fresh herbs, berries, melons and nectarines are all fantastic and in their highest season now. Greek Yogurt with Berries and Raw Nuts In the winter months I prefer something cooked and savory for breakfast but in summer this does just the trick! Choose your favorite Greek Yogurt (preferably unsweetened) and top with fresh berries and raw nuts. Enjoy with hot coffee, tea or your favorite breakfast beverage. Whole Grain Bread with Fresh Fruit Whole Grain Bread with Fresh Fruit This is a great side with breakfast or lunch or mini meal for late afternoon. Serve your favorite whole grain bread (I adore the whole-wheat, sourdough rye from Balthazaar) with a bit of olive oil (think healthy fats!) and fresh summer fruit like a sliced nectarine or cherries. Arugula Salad with Grilled Salmon, Asparagus and Cucumbers Arugula Salad with Grilled Salmon, Asparagus and Cucumbers Make a base with fresh greens, cucumbers and anything green that you love. Add in a bit of fresh fruit for taste and color – orange slices, apples, even a peach for summer! Top with a piece of grilled chicken or fish (I choose wild caught salmon here) for extra protein and fat to really satisfy. Serve and enjoy!
