Russian Beet Salad

– 3 medium beets
– 2 medium potatoes
– 2 medium carrots
– 1 cup Kosher pickles
– 1 cup sweet peas
– 1 cup sauerkraut
– 1/2 cup parsley
– 1/2 cup green onion
– extra virgin olive oil
– sea salt to taste
– freshly ground pepper to taste
