Healthy Summer Cookout! Labor Day is just around the corner which means it’s time for a summer cookout! We love celebrating the end of summer with a fun barbecue while enjoying some time outside or by the pool. We have a few tasty, healthy cookout recipes that we wanted to share with all of you. They are a wonderful way to keep it nutritious and most importantly delicious during your next summer barbecue. Enjoy! Classic Turkey Burger
Ingredients: Turkey burger (4 oz ground turkey) Sliced swiss cheese Sliced tomato Sliced red onion Head of butter lettuce Instructions: Grill burger until cooked through. Top with cheese, tomato, and red onion. Wrap in lettuce leaf. ‘Bello burger:  Ingredients: Turkey burger (4 oz ground turkey) Goat cheese Balsamic reduction sauce Portobello mushroom caps Instructions: Thoroughly wash mushrooms and scoop out gills with a spoon. Grill burger until cooked through. Place mushroom caps on grill for 2-5 minutes, until they are warm and a little crispy on the edges. Place cooked burger on Portobello cap, top with goat cheese, and drizzle with balsamic reduction. Top with second grilled portobello cap and enjoy! Mediterranean Vegan Burger Mediterranean Vegan Burger Ingredients: Your favorite store-bought or homemade veggie burger Your favorite hummus Arugula Whole grain burger bun Instructions: Grill veggie burger until heated throughout. Toast whole grain buns on grill until warm. Sandwich burger between buns and top with hummus, arugula, and any other veggie toppings you love! Mango, Black Bean and Corn Salad Mango, Black Bean and Corn Salad This yummy fiber and protein packed salad is a delicious and healthy alternative to carb-heavy classics like macaroni and potato salad! Ingredients: Mango Red onion Red pepper Canned black beans, drained and rinsed Corn, off the cob and cooked Cilantro Limes Instructions: Cut mango into cubes, chop red pepper, and dice red onion. Combine mango and onion with black beans and corn – the proportions are up to you and your individual tastes! Squeeze fresh lime juice, top with cilantro, and season with salt and pepper – mix together and enjoy! Refreshing Watermelon Spritzer Refreshing Watermelon Spritzer: Ingredients: Watermelon juice Sparkling wine Mint sprig for garnish Instructions: Mix all of the ingredients together – the proportions are up to you! Top with mint sprig for garnish.
